Stuffed French Toast 

2 Eggs, beaten 

1 tbsp.  Cream, 35% 

1 tsp Vanilla 

TT Salt  

2 slices thickly cut bread (or sliced bread) 

4 tbsp cream cheese, warm and softened 

As needed unsalted butter 

As needed powdered sugar 

Procedure:  

  1. Whisk together the eggs, cream, salt and vanilla. 
  1. Start slicing bread thinly, but do not do a full slice.  Do a second slice so that you have thick slice that is split most of the way through, with about 1cm (or ½ inch) remaining unsliced at the bottom.  Repeat this so that you have two pieces of bread that have been split open. 
  1. Spread about 2 tbsp of cream cheese (or more if you want) inside each of the bread pieces so that it covers nearly the whole surface.  Close the bread, pressing lightly so that the cream cheese acts like a glue holding the split bread closed.  Repeat with the second piece of bread. 
  1. Place the slices of bread in the egg mixture and let soak for 2-3 minutes, turning them over after the first minute or so. 
  1. Cook the slices of French toast in a lightly buttered, preheated sauté pan or griddle set at 350°F (180°C) until golden brown. Turn the slices and cook on the second side until done. 
  1. Placed cooked French toast on a plate and dust with powdered sugar.  Serve with maple syrup or your favourite berry sauce.
