Instructor takes the cake

CNA baking instructor wins big in Las Vegas

Baking students at College of the North Atlantic’s (CNA) Bay St. George campus will be enjoying a new taste with their delicious training: international success.

Instructor Aaron McInnis recently took his skills to the International Baking Industry Exposition (IBIE) in Las Vegas.

Joined by sous chef, fellow baker, and friend Juanita Tobin, once there the duo showcased their creations on a global stage and competed against some of the best bakers in the world, and, they won the Wedding category.

“The expo only happens once every three years,” McInnis said. “It’s the largest expo in the western hemisphere bringing together the baking industry from all over the world. The cake decorating competition happens in the midst of all of this, live and in person for expo goers to enjoy and see what some of the worlds top talents can do.”

The duo represented McInnis’ business, Happy Belly Cakery, and spent the competition creating four elaborate cakes under tight deadlines.

“She’s been there for any crazy cake adventure I have asked her to stand beside me in,” he said. “She’s equally as crazy as I am, and I am grateful to have someone willing to jump at the opportunities with me. We have to bring the creative flair to bring the theme to life which will include a two-tier fondant cake, three-tier square cake, a four-tier wedding cake and a sculpted groom’s cake.”

McInnis said he couldn’t believe it when he learned he would be competing at such a prestigious event.

“When I got the official email, truthfully I almost overlooked the email as I couldn’t believe I had actually been chosen,” he said. “The application process was open worldwide and to be selected as one of the six teams to compete is such an honour.”

While he of course savours the sweet taste of victory, McInnis says it’s always important to try.

“Doing hard things and stepping into a challenging environment only helps us grow personally and professionally,” he added. “I thrive in chaos, feed off of it. Life just gives me the extra little boost I need to do amazing things.”

An added bonus was getting to meet top bakers from around the world, including household names such as Duff Goldman from the TV show Ace of Cakes.

“I have so many people I look up to. I have been fortunate enough to meet so many incredible people over the years,” he said, noting the best part of all is sharing his experience with students, and teaching them what he’s learned.
