Gingerbread Loaf

Equipment

  • 1 Loaf pan
  • 2 Bowls

Ingredients
  

Cake 

  • 1/4 cup Oil
  • 1/4 cup Dark brown sugar-packed 
  • 1 lg Egg
  • 1/4 cup Molasses
  • 1/2 whole Lemon zest
  • 1 tsp Fresh ginger
  • 1/2 cup Milk
  • 1 cup Flour
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1 tsp Cinnamon
  • 2 1/2 tsp Ground ginger
  • 1/8 tsp Clove

Glaze

  • 1 cup Powdered sugar
  • 1 - 1 1/2 tbsp Lemon juice
  • 1 1/2 tsp Fresh ginger

Instructions
 

  • Preheat oven to 350 degrees, prepare loaf pan using Goop.
  • In a bowl, mix oil and brown sugar. Add egg and mix until incorporated. Add molasses and mix until combined. Add vanilla, fresh ginger and lemon zest- mix until combined. 
  • In a separate bowl sift together flour, baking soda, spices and salt. 
  • Alternating milk and flour, in halves add to butter/egg mix. Mix just until combined. 
  • Pour batter in to prepared loaf pan. Bake for 45-65 minutes until toothpick comes out clean.
